When I was growing up my mom always had this Bundt cake on the table, "just in case company came over", especially on the weekends. She would often switch up the flavour by either grating orange or lemon or just add chocolate chips. My kids always ask her to make it for them when she comes to visit.
A few years I made it a point of getting the recipe on one of her visits, so that I had the recipe "just in case company came over. ;)

Bundt Cake
Ingredients:
- 1 tbsp vegetable oil
- 6 eggs
- 1 cup sugar
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- orange or lemon zest (about 1 tbsp) and 1/4-1/2 cup juice (orange or lemon)
Directions:
- Heat oven on to 350C. Grease bundt pan with oil and flour and set aside.
- Mix oil, eggs and sugar with mixer.
- Add in flour, baking powder and salt, and mix together on low speed.
- Zest the lemon or orange and squeeze about 1/4 - 1/2 cup of juice and add to mixture.
- Bake in 350c oven for 45 minutes or until toothpick come out clean. Enjoy!
There are just some things that bring you back to your childhood and this is one of them for me.
